Malabar Prawn Rice

- 1/2 kg prawns (deveined and shelled) shopping list
- 1 tsp chili powder shopping list
- 1/2 tsp turmeric powder shopping list
- salt to taste shopping list
- clarified butter/unsalted butter shopping list
- 2 cups thinly sliced onions shopping list
- 3 tbsp ginger garlic paste shopping list
- green chili paste- depends how much you want to add shopping list
- 2 tsp coriander powder shopping list
- 1/2 cup water shopping list
- juice of half a lime shopping list
- handful of chopped cilantro shopping list
- handful of chopped mint leaves shopping list
- 2 tsp spice Mix (ingredients listed below) shopping list
- spice Mix: (Grind the following into a fine powder) shopping list
- 1/2 tsp fennel seeds shopping list
- 1/2 tsp cumin seeds shopping list
- 1'2 tsp caraway seeds shopping list
- 1 cardamom shopping list
- 1"cinnamon shopping list
- 1/4 tsp grated nutmeg shopping list
- 1 whole mace shopping list
- For the Rice: shopping list
- 2 1/2 cups basmati rice shopping list
- 5 cups water shopping list
- 2 cups thinly sliced onion shopping list
- salt to taste shopping list
- clarified butter/Unsalted butter shopping list
How to make it
- For the Rice:
- Boil water, add rice with the remaining ingredients. Bring to a boil then simmer for 10 mins. Fluff the rice with a fork once it's done.
- For the Prawns:
- Marinate the Prawns with the turmeric and chilli powder and refrigerate for 20 mins.
- Heat the butter in a pan and fry the Prawns till they turn slightly brown. Remove from the pan.
- Add sliced onions to this pan and fry till brown, add ginger-garlic-chili paste to this and fry till the raw smell of the ginger/garlic disappears.
- Add coriander powder and stir into this mix.
- Add 1/2 a cup of water and salt to taste.
- When this gravy begins to thicken add the fried prawns, lime juice, cilantro, mint and the spice mix (reserve a 1/4 tsp for later)
- Stir well and remove from heat.
- Layering the dish:
- Add 2 tbsp of butter to a deep dish.
- Layer half the rice over the butter followed by the Prawns. Sprinkle the 1/4 tsp of Spice Mix you had reserved earlier. Spread the remaining rice over the prawns.
- Drizzle a little melted butter over the rice.
- Cover with a lid or aluminium foil.
- Put this dish in a preheated oven at 350F for 30 mins/ simmer on a stove top for 20mins.
- Serve hot!
