How to make it

  • 1. Heat oil in large pan. Add chicken to pan.
  • 2. Add onion and garlic to pan and cook for a few minutes until golden.
  • 3. Add the chili powder, stir fry for 30 seconds, then stir in the tomatoes, stock, kidney beans and oregano, salt and pepper. Cover and simmer for 15 minutes or until chicken is done.
  • 4. Serve over rice and broken tortilla chips. Top with a little sour cream with a sprinkle of chili powder and garnish with some chopped cilantro.
