Sassy Chicken

- 1 tbs. olive oil shopping list
- 8 bones, skinless chicken thighs (I usualy use 3-4 breasts because I always have them in the freezer) cut in large pieces shopping list
- 1 sliced onion shopping list
- 2 cloves of garlic, mined shopping list
- 1-2 tsp. chili powder shopping list
- 1 14 oz. can of diced tomatoes, drained shopping list
- 6 oz. chicken stock shopping list
- 14 oz. can kidney beans, drained shopping list
- 1/2 tsp. dried oregano shopping list
- tortilla chips shopping list
- salt & pepper shopping list
- sour cream to serve shopping list
- cooked rice shopping list
- cilantro for garnish shopping list
How to make it
- 1. Heat oil in large pan. Add chicken to pan.
- 2. Add onion and garlic to pan and cook for a few minutes until golden.
- 3. Add the chili powder, stir fry for 30 seconds, then stir in the tomatoes, stock, kidney beans and oregano, salt and pepper. Cover and simmer for 15 minutes or until chicken is done.
- 4. Serve over rice and broken tortilla chips. Top with a little sour cream with a sprinkle of chili powder and garnish with some chopped cilantro.
