All In Meatless Mincemeat

- 3 large apples, diced shopping list
- 1 1/2 cups finely shredded carrot shopping list
- 1 medium beet, shredded shopping list
- 18 oz tomatoes (preferably green), chopped shopping list
- juice and zest of one orange shopping list
- juice and zest of one lemon shopping list
- 1 cup fresh (or frozen) cranberries shopping list
- 3/4 cup demerara sugar shopping list
- 1 tsp stevia extract powder shopping list
- 1/4 cup honey shopping list
- 1/4 cup molasses shopping list
- 1 1/3 cups raisins shopping list
- 4 oz dried apricots, diced shopping list
- 12 prunes, chopped shopping list
- 3/4 cup diced dates shopping list
- 1/2 cup dried cranberries shopping list
- 1/2 cup currants shopping list
- 2 tbsp red wine vinegar shopping list
- 1/2 tsp salt shopping list
- 1/2 tbsp allspice shopping list
- 1/4 tsp cayenne shopping list
- 1 tsp nutmeg shopping list
- 1 tbsp cinnamon shopping list
- 1 tbsp fresh-grated ginger shopping list
Later additions
- 1/3 cup rum shopping list
- 1/4 cup amaretto liqueur shopping list
- 4 oz mixed nuts, chopped shopping list
How to make it
- Combine all ingredients except the rum, amaretto and nuts in a large pot See Photo. Cover, and cook over low heat for 3 hours.
- Stir in the rum, amaretto and nuts, re-cover and cook over low heat 30 minutes. See Photo
- Ladle into sterilized jars, leaving 1/2" space.
- Process for 20 minutes in a water-bath canner. Alternatively freeze up to 1 year.
