How to make it

  • HEAT oven to 170ºC.
  • Mix eggs and sugar until creamy. Add yogurt, oil and lemon rind, add ground almonds and flour. Mix until light and fluffy. Pour into 18 paper-lined muffin cups, filling each cup 2/3 full. Add almonds on top. Bake 30 to 35 min. or until tops are golden brown.Cool completely before serving.
  • Store in refrigerator.
