Almond Cupcakes

- 3 eggs shopping list
- 2 cups sugar - use the yogurt cup shopping list
- 1 yogurt natural shopping list
- 1/2 cup olive oil - use the yogurt cup shopping list
- 1 lemon rind shopping list
- 2 cups flour shopping list
- 1 cup ground almonds shopping list
- 16g baking powder shopping list
- almonds for decoration shopping list
- OPTIONAL add a little bit of vanilla extract shopping list
How to make it
- HEAT oven to 170ºC.
- Mix eggs and sugar until creamy. Add yogurt, oil and lemon rind, add ground almonds and flour. Mix until light and fluffy. Pour into 18 paper-lined muffin cups, filling each cup 2/3 full. Add almonds on top. Bake 30 to 35 min. or until tops are golden brown.Cool completely before serving.
- Store in refrigerator.
