Cajun Pan Chicken

- 8oz raw boneless, skinless chicken shopping list
- 2 tablespoons unsalted butter (no substitutes) shopping list
- 2 tablespoons olive oil shopping list
- Cajun or creole seasoning (I use Tony Chachere's) shopping list
How to make it
- Partially freeze chicken, then cut into pieces of desired size (smaller is better).
- Partially melt butter in skillet, then add oil and stir.
- Add chicken and Cajun seasoning to taste.
- Cook through; we prefer ours somewhat dry, a little crunchy.
