Fish Chowder with White Beans

- 1 large onion, chopped shopping list
- 2 carrots, chopped shopping list
- 2 stalks celery, chopped shopping list
- 1/2 red bell pepper, chopped shopping list
- 1/2 orange or yellow bell pepper, chopped shopping list
- 2 tbsp butter shopping list
- 1/3 cup flour shopping list
- 6 cups water shopping list
- 1 cup milk shopping list
- 2 sprigs thyme shopping list
- 1 bay leaf shopping list
- 1/2 tsp coriander seed, crushed shopping list
- 1 can white kidney beans (yeah, you heard me, no potatoes!) shopping list
- 3 cloves garlic, minced shopping list
- 1 lbs grouper fillet, cubed shopping list
- salt, fresh ground black pepper to taste shopping list
- 1/2 cup cream or half and half shopping list
- finely chopped parsley shopping list
How to make it
- Melt butter in a dutch oven.
- Saute chopped vegetables slowly, until soft and translucent
- Add flour, saute for 2-3 minutes, stirring constantly, until lightly browned
- Add water and stir well for a few minutes, until smooth and no lumps
- Bring to a boil, add beans, thyme, bay leaf, coriander, garlic and milk
- Add salt and pepper to taste
- Simmer for about 15 minutes covered, so that all the flavors blend well
- Add grouper chunks, simmer for another 15 minutes.
- Add cream, warm through and simmer for a couple of minutes.
- Add parsley just before serving and stir.
- Turn off the heat and let sit on the stove for a few minutes.
