Chickpea Curry

- 1 onion, chopped shopping list
- 5 cloves garlic, minced shopping list
- 1 apple, diced shopping list
- 1 tomato, chopped shopping list
- 1 tsp olive oil shopping list
- I can (19 oz) chickpeas, rinsed and drained shopping list
- 4 tsp good curry powder shopping list
- 1 1/2 tsp salt shopping list
- good pinch (about 1/4 tsp) hot paprika or chili powder shopping list
- 1 tsp cumin shopping list
- 1/2 tsp sugar shopping list
- 1/4 cup water shopping list
- 1 tsp tahini (optional) shopping list
- couple grinds of black pepper shopping list
How to make it
- Heat oil in frying pan.
- Add onions, cook for a few minutes, then add garlic, cook for one minute, then add curry, paprika & cumin. Cook for about a minute.
- Add water (as much as you want -- I put about 1/4 cup) and salt, and bring to boil; simmer until slightly thickened, then add tomato, apple and sugar. Simmer until desired thickness is reached, then stir in tahini if you have it.
