Corn Salsa

- 3 1/2 cups fresh corn kernels (or 1 lb frozen) shopping list
- 2 small cans sliced black olives shopping list
- 1 red pepper, chopped shopping list
- 1/2 onion, finely chopped shopping list
- 4 garlic cloves, crushed shopping list
- Dressing: shopping list
- 1/2 cup olive oil shopping list
- 1/4 cup lemon juice shopping list
- 1 tsp oregano shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 2 avocados, chopped shopping list
How to make it
- Combine the 1st 5 ingredients in a large bowl;set aside.
- For the dressing mix all the ingredients (minus the avocados) together well, and combine into the salsa ingredients. Sprinkle the avocados on top.
- Put into the refrigerator to blend the flavors (marry them, as I was taught) overnight.
