Southwestern Chicken

- 3 1/2 to 4 pounds chicken pieces; bone-in or boneless, skin-on or skinless shopping list
- 1 large onion, peeled and sliced shopping list
- 2 Medium tomatoes, each cut into 6 wedges shopping list
- 1 red bell pepper, sliced into rings shopping list
- 1 (4-oz. can) sliced black olives, drained shopping list
- SAUCE: shopping list
- 1/2 cup butter shopping list
- 2/3 cup flour shopping list
- 1 tsp. salt shopping list
- 1 tsp. paprika shopping list
- 1 tsp. oregano shopping list
- 1/4 cup grated parmesan cheese shopping list
- 3 cups chicken broth shopping list
How to make it
- Place chicken pieces in a 9"x13" baking dish.
- Top with onions, tomatoes, peppers, and olives.
- In a medium saucepan, melt butter.
- Add flour, spices, and cheese.
- Stir until well blended.
- Stir in chicken broth until blended.
- Pour sauce over chicken and vegetables.
- Cover pan with foil and bake in 350*F. oven for 1 1/2-hours.

- Place chicken pieces and vegetables in large crock pot.
- Pour in sauce.
- Cover and cook on LOW 4 to 5 hours.
- Serve over cooked rice...
