Yummy Oat Bran Muffins

These muffins are moist, low fat and may be prepared in a variety of ways to one liking. I like to use low fat buttermilk which really makes for a moist muffin. Ingredients
- 1/2 cup sugar ( may be white , dark brown or Splenda for baking ) shopping list
- 1 1/2 cups 100% oat bran shopping list
- 1 1/2 cups flour ( may be part whole wheat if desired ) shopping list
- 2 tsp baking powder shopping list
- 2 tsp baking soda shopping list
- dash salt shopping list
- 1 tsp vanilla ( or other flavor if desired ) shopping list
- 2 large eggs shopping list
- 1/2 cup oil ( or apple sauce ) shopping list
- 1 cup buttermilk or as needed shopping list
- Optional: add some raisins if desired shopping list
- Optional: add 1 tsp cinnamon to batter shopping list
How to make it
- Preheat oven to 400F
- Line 12 cup muffin tin with paper liners
- Mix together all the dry ingredients
- Blend together all the wet ingredients
- Combine both mixtures till well blended
- Batter will be thick
- Divide batter into muffin tins ( at least 2/3rds full )- I use an ice cream scoop to do this
- Bake until golden and tested done, about 20 minutes or so
- Remove from muffin tins
- Let cool on rack
- May be frozen
