Veggie Bean and Brown Rice Burgers

- 2 cups chickpeas (drain if from a can, must cook beforehand if dry and soaked) shopping list
- 1 cup cooked brown rice shopping list
- 1 green onion, chopped shopping list
- 1 clove garlic, minced shopping list
- 2 tablespoons chopped fresh parsley shopping list
- salt (to taste) shopping list
- pepper (to taste) shopping list
- 1 large egg, whisked shopping list
- 2 tablespoons olive oil shopping list
- Whole-grain mustard shopping list
- tomato shopping list
- lettuce shopping list
How to make it
- Mix chickpeas and rice. We found it's best when coarsely blended otherwise it falls apart too easily. But don't go so far as to puree it.
- Add in green onion, garlic, and parsley. Season with salt and pepper.
- Mix in egg. Form into half inch patties.
- Heat olive oil in frying pam. Cook patties until browned, about 5 each side.
- Serve with mustard, tomato and chopped lettuce. (or any other garnish you can think of...sriracha sauce, onion?
