Turkey Picadillo

- INGREDIENTS: shopping list
- 1 pounds fat-free ground turkey shopping list
- extra-virgin olive oil for sautéing shopping list
- 1 small yellow onion, chopped shopping list
- 4 cloves garlic, minced shopping list
- 1 green bell pepper, seeded and chopped shopping list
- 1 bay leaves shopping list
- 1 tsp. oregano shopping list
- 1 tsp. cumin shopping list
- 1/2 cups corn kernels (opt) shopping list
- 1/2 cups green peas (opt) shopping list
- 1/3 cup chopped pitted green olives shopping list
- 1 tbsp. capers, rinsed shopping list
- 8 oz can tomato sauce shopping list
- 1/4 cup beef or chicken broth shopping list
- 1/4 cup dry white wine shopping list
How to make it
- In a large nonstick skillet over medium-high heat, sauté the turkey, crumbling it with a wooden spoon, until no longer pink, about 5 minutes. Transfer to a colander set over a plate and set aside.
- Return the skillet to the stove over medium heat and add the olive oil. Once the oil is hot, add the onion, garlic and bell pepper. Sauté, stirring often, until the vegetables have softened, 2 to 3 minutes.
- Add the bay leaf, oregano and cumin. Continue cooking, stirring, until fragrant, about 1 minute. Add the corn (opt), peas (opt), olives, capers, tomato sauce, chicken broth and wine. (remove the pan from heat before adding wine). Add the browned meat mixing well. Reduce heat to low, cover and simmer, stirring occasionally, for 15 minutes. Serve over rice.
