Lemon Squares

Crust
- 1 cup butter, softened shopping list
- 1/2 cup confectioner's sugar shopping list
- 2 cups gluten-free flour shopping list
- 1/4 teaspoon salt (if using unsalted butter) shopping list
Filling
- 6 large eggs at room temperature shopping list
- 2 cups granulated sugar shopping list
- 1/2 cup corn starch shopping list
- 2 tablespoons grated lemon zest (4 to 6 lemons) shopping list
- 1 cup freshly squeezed lemon juice shopping list
- confectioners' sugar, for dusting shopping list
How to make it
Crust
- 1. Preheat over to 350F
- 2. Cream butter and sugar until fluffy
- 3. Stir in flour (and salt, if desired) until just mixed
- 4. Press into a 9x13 baking dish
- 5. Bake until lightly browned, about 15 minutes
Filling
- 1. Stir together sugar, lemon zest, and corn starch
- 2. Beat eggs until light
- 3. Add sugar mixture and lemon juice, and stir until mixed
- 4. Pour over crust, and bake until set, about 30 minutes
