How to make it

  • Crust

  • 1. Preheat over to 350F
  • 2. Cream butter and sugar until fluffy
  • 3. Stir in flour (and salt, if desired) until just mixed
  • 4. Press into a 9x13 baking dish
  • 5. Bake until lightly browned, about 15 minutes
  • Filling

  • 1. Stir together sugar, lemon zest, and corn starch
  • 2. Beat eggs until light
  • 3. Add sugar mixture and lemon juice, and stir until mixed
  • 4. Pour over crust, and bake until set, about 30 minutes
