My Super Bowl Beef And Bean Chili

- 2 Tbs cooking oil ( I used olive ) shopping list
- 1 large yellow onion diced shopping list
- 3 lbs sirloin tip roast ( or other tender cuts of beef you like ) cut in cubes shopping list
- 1 cup beer, any kind shopping list
- 1 can 16 oz tomato sauce shopping list
- 1/4 cup ketsup shopping list
- 1 16 oz can pink kidney beans drained and rinsed shopping list
- 1, 16 oz can red kidney beans drained and rinsed shopping list
- 1 19 oz can black beans drained and rinsed shopping list
- 1, 16 oz jar favorite salsa ( I used mild corn and black bean salsa ) shopping list
- 1. 16 oz can chili beans ( already seasoned with spices-brands vary ) shopping list
- 1 Pkg taco seasoning mix shopping list
- 1 tsp chipotle chili powder shopping list
- 1 tsp cumin shopping list
- 2 tsp salt or as needed shopping list
- 1/4 tsp black pepper or as needed shopping list
- 1 tsp garlic powder shopping list
- 1 dried chipotle chili pepper( available at Latin grocers, gourmet stores ) shopping list
- Doritos brand Nacho cheese chips ( 35 chips or so as needed ) shopping list
- Condiments: shopping list
- guacamole, chopped cilantro, sour cream, shredded cheddar cheese, chopped ice berg lettuce, salsa of choice, corn chips,chopped onion, chopped jalapeno peppers, etc. shopping list
How to make it
- In the oil, saute the onions till soft, add meat cubes and brown and remove from heat.
- In your stove top pot, a crock pot or pressure cooker, add and stir everything except the Dorito Nacho chips
- Slow cook low 6-8 hours or meat is tender, stovetop covered and simmered about 1 hour or meat is tender or 18-20 minutes in your pressure cooker and let steam dissapate naturally
- When done, stir in enough Doritos chips as needed to thicken the chili because the finished chili may be some what liquidy
- The chips will soften in the chili , add some flavor and also thicken it
- Correct seasoing if needed with salt, pepper, chipotle chili powder etc.
- Tastes great if made ahead of time and freezes well
- Serve the chili in bowls and tell your guests to add the topping of their choice to their chili
