Oatmeal Coconut Chip Cookies

I found the basis for these cookies in a cookbook a friend's mom gave me years ago...I've varied it to suit my tastes...just took a batch out of the oven, in fact. They are chewy, crisp on the edges and oh so good! Read more I vary the chips, as well, sometimes using bittersweet, or butterscotch, or whatever I have in the house. See less
Ingredients
- 3/4 c. margerine shopping list
- 1 c. packed brown sugar shopping list
- 1/2 c. white sugar shopping list
- 1 egg shopping list
- 1/4 c. water shopping list
- 1 tsp. vanilla shopping list
- 1 c. flour shopping list
- 1 tsp. salt shopping list
- 1 tsp. cinnamon shopping list
- 1/2 tsp. baking soda shopping list
- 1 1/2 c. oatmeal shopping list
- 1 1/2 c. unsweetened coconut shopping list
- 1/4 c. white chocolate chips shopping list
- 1/4. c. chocolate chips shopping list
- 1/4 c. toffee bits (such as Skor) shopping list
How to make it
- Beat butter with sugars till fluffy
- Add egg, vanilla and water, beating well.
- Combine flour, salt, cinnamon and soda. Blend in.
- Stirl in remaining ingredients, mixing well.
- Drop by rounded teaspoons onto baking sheet (I line mine with foil...easy to remove cookies, after they cool, and no need to wash after!)
- Bake at 350 degrees 12 - 14 minutes till lightly golden.
