Gingerbread Pancakes

- 1 1/2 cups plain flour shopping list
- 1 tablespoon baking powder shopping list
- Pinch of salt shopping list
- 1/4 cup sugar/molasses shopping list
- 2 large eggs, beaten shopping list
- 30g butter, melted and cooled shopping list
- 300ml buttermilk shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/4 teaspoon ground cloves shopping list
- 1 tbsp cocoa shopping list
- 1 cup freshly brewed coffee shopping list
- 1 3/4 cups buttermilk shopping list
- 2 teaspoons freshly grated ginger/1 tsp powdered ginger shopping list
- icing sugar to garnish shopping list
How to make it
- Sift together all the dry ingredients. Blitz these with the rest of the ingredients in a blender.
- Heat you griddle over medium heat, and lightly grease. Drop the batter onto the hot skillet in large spoonfuls, about 1/4 cup per pancake. Cook until small bubbles appear, adjusting the heat as necessary. Flip the pancakes to the other side using a spatula and cook until firm.
- Dust with icing sugar.
- Serve hot.
