How to make it

  • Cook salt pork until crispy, set aside
  • Add butter to saute pan,add onions, thyme and bay leaf,cook until onions have sweated but not browned.
  • In a 8 qt. pan add stock and potatoes, add water to just cover potatoes, bring to a boil, cook for 10 more minutes then reduce to low, season with salt and pepper to taste.
  • Add fish and cook over low heat for 5 minutes.
  • Remove pot from heat and allow to sit for 10 to 15 minutes then stir in cream.
  • Add cracklings to pot and serve.
