New England Fish Chowder

- 4 oz. salt pork shopping list
- 2 Tbsp butter shopping list
- 2 med. onions shopping list
- 1 tbsp thyme shopping list
- 2 bay leaves shopping list
- 5 lbs yukon gold potatoes (Peeled and Diced to bite size) shopping list
- 2 15oz. can fish stock shopping list
- 3 lbs. haddock shopping list
- 1 1/2 pint heavy cream shopping list
How to make it
- Cook salt pork until crispy, set aside
- Add butter to saute pan,add onions, thyme and bay leaf,cook until onions have sweated but not browned.
- In a 8 qt. pan add stock and potatoes, add water to just cover potatoes, bring to a boil, cook for 10 more minutes then reduce to low, season with salt and pepper to taste.
- Add fish and cook over low heat for 5 minutes.
- Remove pot from heat and allow to sit for 10 to 15 minutes then stir in cream.
- Add cracklings to pot and serve.
