How to make it

  • 1. Soak beans overnight.
  • 2. Heat oil in large saucepan over medium-high heat. Sauté onions, pepper, celery, salt, cayenne, pepper and thyme about 5 minutes.
  • 3. Add bay leaves, ham, and sausage; sauté 5 more minutes.
  • 4. Add beans, garlic and enough water to cover beans. Bring to a boil, reduce to medium and simmer uncovered, stirring occasionally 1 to 1 ½ hours. Add water if need be.
  • 5. Mash ½ mix against side of pot. Cook another 1 ½ hours (adding water).
  • 6. Remove bay leaves before serving.
  • 7. Serve with rice.
