Fancy Mini Pizzas

- 1 12-inch Boboli this pizza crust shopping list
- 2 tablespoons extra-virgin olive oil shopping list
- 1/2-3/4 pound Fontina cheese, grated shopping list
- 1 cup scallions or leeks, thinly sliced shopping list
- 1 cup roma tomatoes, chopped shopping list
- 2 teaspoons dried thyme (could probably also use oregano) shopping list
- kosher salt, to taste shopping list
How to make it
- Preheat oven to 425 degrees.
- Place the pizza crust on a large pizza pan or baking sheet.
- Spread crust evenly with olive oil.
- Sprinkle with fontina cheese.
- Sprinkle evenly with the scallions or leeks.
- Sprinkle evenly with the tomatoes and thyme.
- Season with salt and pepper.
- Bake pizza until crust is golden and cheese is melted, 12-15 minutes.
- Cool on pan for 5 minutes or else the cheese will run off when you try to cut it.
- Cut into wedges, triangles, squares or just slice it like a pizza! The shape doesn't matter....they are good!!!
