Apple Cake

- Cake: shopping list
- • 1 package moist yellow cake mix shopping list
- • 3 eggs shopping list
- • 1 ¼ cups apple juice shopping list
- • 1/3 cup vegetable oil shopping list
- • 1 tsp ground cinnamon shopping list
- • 2 cups peeled, grated apples shopping list
- • ½ cup flour shopping list
- • 1 cup chopped pecans shopping list
- Icing: shopping list
- • 3 Tb butter shopping list
- • 3 Tb sugar shopping list
- • 3Tb brown sugar shopping list
- • 3 Tb whipping cream shopping list
- • ½ cup confectioner’s sugar shopping list
- • ¼ tsp vanilla shopping list
- • pecan halves for garnish shopping list
How to make it
- 1. Preheat oven to 350. Grease and flour a Bundt pan.
- 2. For cake: combine cake mix, eggs, apple juice, oil and cinnamon in large bowl. Beat at medium speed for 2 minutes.
- 3. Toss apples with flour in medium bowl. Fold flour-coated apples and chopped pecans into batter. Pour into pan.
- 4. Bake at 350 for 45 minutes or until toothpick comes out clean. Cool in pan 25 minutes. Invert on serving plate. Cool completely.
- 5. For frosting: combine butter, sugars, and whipping cream in small heavy saucepan. Bring to a boil over medium heat; boil 1 minute.
- 6. Remove from heat; cool 20 minutes. Add confectioner’s sugar and vanilla. Blend with wooden spoon until smooth and thick.
- 7. Spread frosting over completely cooled cake and garnish with pecan halves.
