Pumpkin And Almond Muffins

- 1 cup plain flour or wholemeal shopping list
- 1/2 cup rolled oats shopping list
- 1/2 cup brown sugar shopping list
- 1 cup butterscotch pumpkin (boiled, mashed and cooled) shopping list
- 2 eggs shopping list
- 1/4 cup vegetable oil shopping list
- 1/2 cup milk shopping list
- 2 teaspoon baking powder shopping list
- 2/3 teaspoon bicarbonate soda shopping list
- 1/2 cup chopped almond nuts shopping list
- 1/4 teaspoon salt shopping list
- 2 tablespoon vanilla essence shopping list
- 1/2 teaspoon nutmeg powder shopping list
- 1/2 teaspoon cinnamon powder shopping list
How to make it
- preheat the oven to 180 degrees celcius
- grease a 6 large muffins pan ith butter or margarine
- place all the dry ingredients apart from the almond nuts in a large bowl and shift them
- in a seperate bowl beat the eggs with the oil, vanilla essence and the milk
- make a well in the middle of the dry ingredients
- pour in the egg mixture and mix just to combine
- add the mashed pumpkin and give a quick mix
- finally add the almond nuts and mix thoroughly...do not over mix
- place in muffin pans and bake on the middle shelf for around 20-25 minutes or until golden brown and a toothpick inserted comes out dry
- remove from oven
- allow to cool and serve warm with plain yoghurt or dollop of sour cream..enjoy
