How to make it

  • preheat the oven to 180 degrees celcius
  • grease a 6 large muffins pan ith butter or margarine
  • place all the dry ingredients apart from the almond nuts in a large bowl and shift them
  • in a seperate bowl beat the eggs with the oil, vanilla essence and the milk
  • make a well in the middle of the dry ingredients
  • pour in the egg mixture and mix just to combine
  • add the mashed pumpkin and give a quick mix
  • finally add the almond nuts and mix thoroughly...do not over mix
  • place in muffin pans and bake on the middle shelf for around 20-25 minutes or until golden brown and a toothpick inserted comes out dry
  • remove from oven
  • allow to cool and serve warm with plain yoghurt or dollop of sour cream..enjoy
