Oven Baked Vegetables

- 1 large sweet potato (scrubed and cubed) shopping list
- 10 large mushrooms shopping list
- 2 large zuchuni (chopped in chunks) shopping list
- 2 large carrots (scrubbed and chopped) shopping list
- 2 large onions (peeled and quartered) shopping list
- 1 medium pumpkin (peeled and cube) shopping list
- 3 gloves of garlic (crushed) shopping list
- 1 tsb of ginger shopping list
- 1/4 cup vegetable stock shopping list
- 2 tablespoon dry herbs shopping list
- 1 bunch of fresh herbs shopping list
- 3 tablespoon olive oil shopping list
- salt and pepper to taste shopping list
- 2 tablespoon lemon juice shopping list
How to make it
- place all the vegetables in a large oven proof dish
- beat the oil with the ginger and garlic
- using a kitchen brush coat the vegetabless with the oil mixture
- sprinkle the salt, pepper and dry herbs on top
- slowly pour the stock around the vegetables
- add the herbs bunch
- cover with foil and bake for 20 minutes
- after 20 minutes
- remove foil and bake for 10 more minutes
- sprinkle with the lemon juice and enjoy
