How to make it

  • place all the vegetables in a large oven proof dish
  • beat the oil with the ginger and garlic
  • using a kitchen brush coat the vegetabless with the oil mixture
  • sprinkle the salt, pepper and dry herbs on top
  • slowly pour the stock around the vegetables
  • add the herbs bunch
  • cover with foil and bake for 20 minutes
  • after 20 minutes
  • remove foil and bake for 10 more minutes
  • sprinkle with the lemon juice and enjoy
