How to make it

  • Preheat the oven to 375F.
  • Wash the potatoes. See Photo
  • Pierce the skins with a fork to help the cooking.
  • Wrap each potato with kitchen foil. Place them in a baking tray and into the oven for 45 minutes.
  • Let the potatoes cool. When they are cooled enough to handle, skin them and put the potatoes on a bowl.
  • Add the seasoning and cream, stir well. You might want to add butter, I skipped that because I found my potatoes humid enough.
  • Ready to serve or use to other purposes.

    A purple potato is a kind of potato that has purple skin and or flesh (sometimes called blue) with varieties being Purple Peruvian, Davis Purple, Eureka Purple, Fenton Blue, Purple Mountain, Blue Tomcat etc.
