Mediterranean Turkey Burgers with Couscous

- 1 lb. ground turkey shopping list
- 1 egg shopping list
- 1 bunch flat leaf parsley, chopped shopping list
- 1 bunch fresh mint, chopped shopping list
- 8 oz. reduced fat feta cheese, crumbled and separated shopping list
- pepper to taste shopping list
- olive oil shopping list
- 1 cup water shopping list
- 1 tablespoon olive oil or butter (optional) shopping list
- 1 cup couscous shopping list
- 1/2 cup golden raisins shopping list
- 1/3 cup pine nuts, toasted shopping list
- 1 bunch green onions, green and white parts chopped shopping list
How to make it
- In a large bowl, mix together ground turkey and egg until well combined.
- Add parsley, mint and about 3/4 or the feta cheese; mix with hands until well combined.
- Separate meat into 8 equal portions and form into patties about 3/4" inch thick.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. When it's hot, add patties about 1/2" apart. Cook until golden brown on each side, about 5 minutes per side. Remove and transfer to a plate.
- While patties are cooking, heat water and 1 tablespoon olive oil in a medium pot.
- When water comes to a boil, add couscous. Stir to combine.
- Add raisins, cover and remove from heat.
- Let sit for five minutes, then stir in white parts of chopped green onions.
- Spoon couscous on plate, then top with 2 turkey patties. Garnish with the rest of the chopped green onions and feta.
