How to make it

  • In a large bowl, mix together ground turkey and egg until well combined.
  • Add parsley, mint and about 3/4 or the feta cheese; mix with hands until well combined.
  • Separate meat into 8 equal portions and form into patties about 3/4" inch thick.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. When it's hot, add patties about 1/2" apart. Cook until golden brown on each side, about 5 minutes per side. Remove and transfer to a plate.
  • While patties are cooking, heat water and 1 tablespoon olive oil in a medium pot.
  • When water comes to a boil, add couscous. Stir to combine.
  • Add raisins, cover and remove from heat.
  • Let sit for five minutes, then stir in white parts of chopped green onions.
  • Spoon couscous on plate, then top with 2 turkey patties. Garnish with the rest of the chopped green onions and feta.
  • Enjoy!
