Ingredients
  • One cup of rice (or a cup and a half if you like lots of rice), not the quick cook kind. I use the Japanese rice.Chicken breasts or thighs, 4 to 6 of each. In a separate bowl combine three cans of cream of mushroom soup. Use a cup of milk to swish out the soup out of every can, and add it to the bowl. Add a tablespoon and a half of mayonnaise, if you don't have mayonnaise use sour cream, ( I find that mayonnaise tastes better). Mix thoroughly. You can add Lipton Onion Soup mix as well. I have found that it tastes good with or without the onion soup mix. You can also add sweet onions and broccoli.

Directions
  1. Put the rice in the baking dish and the broccoli on top of the rice if you choose to add the broccoli. Place the chicken pieces on top of the rice. Pour the cream of mushroom mix on top of the chicken and the rice and bake at 350 degrees covered for an hour. Check it every once in a while and make sure the rice is cooked under the chicken, adding water as needed so that the rice is it tender. Once the chicken is cooked, take the cover off and bake until there is a brown crust on the chicken and rice.
  2. Serve hot with a salad and a roll. Enjoy for a few days after as a leftover.
