- 1 Ryvita Original cracker shopping list
- Quark cheese [or other very low fat soft cheese, such as low-fat cottage cheese or very light cheese spread, always check fat content before purchase. shopping list
- fruit [I used fresh mandarin, but any fruit, (fresh, frozen, tinned [in natural juice but drained], cooked, dried or puréed without added sugar) can be used according to taste and availability. shopping list
How to make it
- Thickly spread each cracker with the the quark cheese.
- Add the fruit on top

- VARIATIONS
- If you dislike Ryvita, alternatives include crackerbread, corn crisp, or rice crackers. As with the cheese always check the fat and calorie content before purchase, as some types can be surprisingly high in fat.. Half a slice of cold toasted wholemeal bread per person can also provide an alternative, this will be somewhat higher in calories but still lower than standard cheesecake.
