How to make it

  • Saute the garlic in the olive oil and butter over medium heat until the garlic is browned.
  • Stir in the water, tomato paste, tomatoes, basil, and red pepper flakes
  • Bring to a simmer.
  • Add mussels.
  • Sprinkle with a pinch of salt and pepper and the chopped oregano
  • Cover immediately and let simmer until mussels have opened (about 3-5 minutes)
  • Squeeze the juice of one lemon over the mussels
  • Pour all of the mussels and juices into a large serving dish and serve immediately
  • Enjoy with toasted bread for dipping
  • Note: Be sure to use fresh mussels. Clean and debeard them first.
  • If any of the mussels are open prior to cooking them- tap on them, if they do not close up, they are dead and you need to throw them away.
