Risotto

- 2.5 cups arborio rice (short grian rice)\ shopping list
- medium onion shopping list
- 1 large tomato shopping list
- 1L stock shopping list
- 1 tbs tomato puree shopping list
- 1/2 cup cheese shopping list
- salt and pepper to taste shopping list
- parsley or other herbs shopping list
- ( this is just a vegetarian version but you could add bacon, chicken, beef, corn, beens, capisum, etc ) shopping list
How to make it
- Chop the Onion finely
- Chop the tomato and set aside
- Saute onion in a pan
- Add the chopped tomato and tomato puree. Stir well
- Add the rice
- Pour in the stock a little at a time stiring all the time
- let the stock be absorbed before adding more
- Add in the salt, pepper, herbs, and anyother ingredients that you like
- Remove from heat, add grated cheese, stir through and serve
