How to make it

  • Crack shell and remove lobster meat
  • Coarse chop
  • Bind with only enough mayo to bind- don't make over creamy- you want the fresh lobster taste to come through with each bite
  • Squeeze on some ( a little squeeze ) of fresh lemon juice
  • Add a small amount of finely chopped celery and onion- perhaps1-2 Tbs of each
  • Salt and fresh cracked pepper to taste
  • Fill up soft open hot dog rolls ( lightly toast if desired )
  • I love those soft potato rolls
  • Optional stuff: butter rolls if desired, add a leaf of Boston lettuce
  • garnish ( lemon or a sprig of dill ) if desired
  • Serve immediately- for Lobster roll heaven
