Sweet Potatoes And Blue Cheese

Sometimes I don't want overly sweet . So try this with lime, coconut oil and blue cheese. It's really a nice but different combination and would make a great accompaniment to meat, fish or poultry
Ingredients
- 6 medium sweet potatoes cooked shopping list
- 2 Tbs coconut oil ( or use butter if desired but I like the coconut flavor ) shopping list
- juice from 1 large fresh lime shopping list
- 1/2 cup gorgonzola cheese crumbles shopping list
- salt and pepper to taste shopping list
How to make it
- Cook potatoes in their skins
- When cool enough to handle, slip off skins
- Mash or use an electric mixer, to combine potatoes with all the remaining ingredients
- Season with salt and pepper to taste
- Place in casserole dish
- Reheat in micro or oven
