Sticky Date Muffin Pudding

- 7 oz. dried dates – coarsely chopped shopping list
- 1 t baking soda shopping list
- 1 ¼ c boiling water shopping list
- 2 oz. butter softened shopping list
- 1 c brown sugar shopping list
- 1 c self-rising flour shopping list
- 2 eggs lightly beaten shopping list
How to make it
- • Preheat oven to 350 degrees F
- • Place dates, soda and boiling water into blender jar and let Stand for 5 minutes
- • Add butter and sugar, place lid on jar and Pulse 2-3 times
- • Add remaining ingredients (self-rising flour and eggs) and Pulse till combined – Do Not Over Process and scrape sides if necessary
- • Divide the mix in 8 holes of a muffin tray.
- • Bake 20 minutes or till toothpick test passes
- • Remove from oven and let Stand 5 minutes
- • Place muffins on a cooling rack.
- • Serve warm
- Note: Caramel sauce or whipped topping are suggested but they are just fine without it. They can be stored in an air-tight container.
