Roasted Tomato Sauce

- 8 lbs. ripe tomatoes - any variety you have shopping list
- 8 cloves garlic shopping list
- 5 medium onions shopping list
- 1 cup fresh herbs (Rosemary, Italian flat leaf parsley, thyme, oregano and/or chives shopping list
- 1/4 cup olive oil shopping list
- 1 teas. salt shopping list
- fresh ground pepper to taste shopping list
- 3 Tbsp. sugar (optional) shopping list
How to make it
- Preheat oven to 450 degrees.
- Peel garlic - chop 4 cloves and leave 4 cloves whole.
- Chop tomatoes in 1/2" dice - do not peel. Chop onions in 1/2" dice. Chop your choice of herbs.
- Combine tomatoes, all garlic (whole and chopped), onions, olive oil, salt, pepper. Put into roasting pan.
- Roast for 25 minutes. Gently stir. Roast another 25 minutes and stir gently again. Roast 45 minutes or until tomatoes are softened and broken down into a sauce with a golden brown crust on top.
- Remove from oven and taste for seasoning. If slightly bitter or sour, add sugar (or sweetner) to taste. Pour sauce into clean and sterile jars or freezer bags, Refrigerate, can or freeze. If you prefer a smoother sauce, blend in blender or with immersion blender until smooth.
