Ceylon Cinnamon Red Lentils

- • 1lb fresh spinach (or Frozen chopped 12 oz package) shopping list
- • 1/2 cup red lentils shopping list
- • 1/2 cup coconut milk shopping list
- • 2 teaspoons. mustard shopping list
- • 2 teaspoons. unroasted curry powder shopping list
- • teaspoons turmeric powder shopping list
- • salt shopping list
- • 1 onion shopping list
- • 1 clove garlic shopping list
- • 1 green pepper shopping list
- • 1/8 teaspoon cinnamon powder or quarter stick (from 3 inch stick) Ceylon cinnamon stick shopping list
- • 1 sliver of lemon grass (optional) shopping list
- • 1 cup water shopping list
How to make it
- Clean spinach and cut into small pieces. Dice garlic clove, onion and green pepper.
- Wash lentils and mix with spinach. Add all spices, onion, garlic, green pepper, cinnamon and lemon grass with lentils and spinach and boil for 10 minutes at medium heat.
- Finally add salt and coconut milk and cook for 2 minutes on low heat.
- NOTE : We have made adding the Mustard and Curry powder optional so it will not be too hot and spicy. If serving as a soup add extra water. Always close the lid when cooking to cook faster and save energy.
- VARIATION 1 : Try adding a half a can of Hunts Chopped Tomato and 2 Tablespoons of Tomato paste instead of the lemon grass, mustard & curry powder. This gives it another unique taste. Hunts Tomatoes are wine ripened and give the correct taste for this.
- VARIATION 2 : Add some Pasta to the Red Lentils and serve as a soup main meal.
