How to make it

  • Preheat oven to 350 degrees See Photo
  • Slice cherry tomatoes in half, place in glass baking dish
  • Slice peppers in half remove stems and seeds, add to baking dish
  • Pour olive oil over veggies, sprinkle with salt
  • Put uncovered in oven, bake for 45 to 55 minutes, stirring once or twice, making sure not to burn - but instead nicely carmelize.
  • Let sit for a few minutes before serving.
  • Can be further processed into a spread for Italian bread, an addition to scrambled eggs, a side dish very well suited to pasta or chicken.
  • In my house this is one of the most requested side dishes.
