Ambrosia Cherry Tomato And Pepper Dish

- 1 pint of cherry tomatoes shopping list
- 1 pkg miniature peppers (red, yellow, orange) shopping list
- 4 TBSP extra virgin olive oil shopping list
- 1 tsp coarse salt shopping list
How to make it
- Preheat oven to 350 degrees See Photo
- Slice cherry tomatoes in half, place in glass baking dish
- Slice peppers in half remove stems and seeds, add to baking dish
- Pour olive oil over veggies, sprinkle with salt
- Put uncovered in oven, bake for 45 to 55 minutes, stirring once or twice, making sure not to burn - but instead nicely carmelize.
- Let sit for a few minutes before serving.
- Can be further processed into a spread for Italian bread, an addition to scrambled eggs, a side dish very well suited to pasta or chicken.
- In my house this is one of the most requested side dishes.

There is a great story behind these peppers and tomatoes - and I have to say - they really make the dish so much sweeter!
