Dijon Balsamic Grilled Chicken

- 1/4 cup Dijon mustard shopping list
- 1/3 cup balsamic vinegar shopping list
- 1/4 (I used less, probably about 3 1/\2 tbsp) EVOO shopping list
- 1 shallot minced shopping list
- 4 (large) garlic cloves, minced to a paste shopping list
- 4 tbsp fresh chopped parsley shopping list
- 1/2 tsp red pepper flakes shopping list
- salt and pepper to taste shopping list
- 4 boneless, skinless chicken breasts shopping list
How to make it
- Whisk dijon, balsamic, red pepper flakes and EVOO into a vinaigrette and add to a large zip top bag. Mince/chop shallot, garlic, and parsley and add to the zip top back. Seal bag and shake vigorously. Taste and add salt and pepper to taste. Add chicken to the bag and let marinate for MINIMUM 2 hours.
- depending on thickness of the chicken, cook about 6-8 minutes per side.
