Moroccan Potato Salad

- 4-6 medium potatoes ( I like red or yukon gold ) shopping list
- 1 bunch of green onions- (chop green parts only ) shopping list
- 3 Tbs fresh chopped parsley shopping list
- 4-6 olives ( green and dark ) chopped shopping list
- 1 large garlic clove minced shopping list
- juice from 1 large fresh lemon shopping list
- 1/4 cup extra virgin olive oil or more if needed shopping list
- salt to taste shopping list
- 1 tsp Ras El Hanout -spice blend- see my separate post on group recipes OR 1 tsp. Za'atar spice- also see group recipes for that shopping list
How to make it
- In a bowl add the olive oil, parsley, lemon juice, spices, garlic, olives and salt and pepper
- Stir to blend
- Cook potatoes by favorite method
- While warm enough to handle, remove skins from potatoes
- Coarse chop potatoes
- Combine with oil mixture in bowl.
- Add more olive oil if needed as warm potatoes will soak up the oil.
- Serve warm or at room temperature.
