How to make it

  • In a bowl add the olive oil, parsley, lemon juice, spices, garlic, olives and salt and pepper
  • Stir to blend
  • Cook potatoes by favorite method
  • While warm enough to handle, remove skins from potatoes
  • Coarse chop potatoes
  • Combine with oil mixture in bowl.
  • Add more olive oil if needed as warm potatoes will soak up the oil.
  • Serve warm or at room temperature.
