How to make it

  • Preheat oven to 425 F, preheat a wide iron cast pan in oven.
  • In a.bowl, combine cranberries, oil, sugar and thyme. Pour into preheated pan and roast about 15 min, until most berries pop. Add orange juice and port wine, roast 5 more min. Stir in the orange zest, let cool.
  • Keep leftover refrigerated.
