Roasted Cranbeery Sauce

- 300 g ( 10 oz ) cranberries, fresh shopping list
- 2 tb neutral oil shopping list
- 3/4 cup sugar shopping list
- 1 tb thyme, minced shopping list
- 1orange, juice and zest shopping list
- 3 tb port wine ( or Madeira ) shopping list
How to make it
- Preheat oven to 425 F, preheat a wide iron cast pan in oven.
- In a.bowl, combine cranberries, oil, sugar and thyme. Pour into preheated pan and roast about 15 min, until most berries pop. Add orange juice and port wine, roast 5 more min. Stir in the orange zest, let cool.
- Keep leftover refrigerated.
