How to make it

  • Place turkey parts in a sauce pot
  • Add onion, celery, garlic, bay leaf
  • Cover with water
  • Bring to a boil
  • Cover and simmer 1 hour or until giblets fork tender
  • If you don't use giblets, simmer only 20 minutes
  • Remove turkey parts from liquid
  • Remove bay leaf
  • Fine dice giblets set aside but return turkey neck meat and liver chopped to pot
  • Hand blend or place in a blender to make mixture smooth
  • Return gravy to pot
  • Add fine diced giblets if using
  • Bring gravy to a boil
  • Sprinkle in enough instant blend flour ( Wondra brand ) to make desired consistency, cooking and stirring only a minute or two
  • Remove from heat
  • Correct seasonings
  • Note: although this gravy is very delish on its own, pan drippings may be added to enrich the flavor
  • Yield: 3-4 cups
