Gluten Free Superfood Pancakes

Dry mix (can be made ahead)
- ¾ cup white rice flour shopping list
- 1/3 cup millet flour shopping list
- 2/3 cup brown rice flour shopping list
- 2/3 cup sorghum flour shopping list
- 1/3 cup soy flour shopping list
- ¼ cup tapioca starch shopping list
- 2 tsp baking soda shopping list
- 2 tsp cream of tartar shopping list
- 1 tbsp ground flaxseed shopping list
- 1 tbsp maca powder shopping list
- ½ tsp sea salt shopping list
- ¼ tsp nutmeg shopping list
- ½ tsp guar gum shopping list
- 1 tsp raw sugar shopping list
- 5 (1-g) packets stevia shopping list
To prepare
- 2/3 cup milk or non-dairy milk shopping list
- 1 egg shopping list
- 1 tbsp canola oil or melted butter shopping list
- 1 cup gluten Free Blueberry pancake mix (above) shopping list
How to make it
Dry mix
- Whisk all ingredients together. Store in an airtight container in the pantry up to 4 months.
To prepare
- In a bowl, whisk together the milk, egg and oil until well blended.
- Add the Gluten Free Blueberry Pancake Mix and whisk until well blended
- and smooth.
- Let stand for 10 minutes.
- Cook on a greased preheated, griddle, flipping halfway through.
