How to make it

  • Wash the yams and pierce them, then cook in the microwave on high for 10-12 minutes or using the "potato" setting.
  • Cool until you can handle them.
  • Scoop out the insides and discard the skins
  • Mix in coconut, coconut milk, maple syrup and ginger.
  • Top with pecans.
  • Bake at 350 F for 30 minutes.
