How to make it
- Wash the yams and pierce them, then cook in the microwave on high for 10-12 minutes or using the "potato" setting.
- Cool until you can handle them.
- Scoop out the insides and discard the skins
- Mix in coconut, coconut milk, maple syrup and ginger.
- Top with pecans.
- Bake at 350 F for 30 minutes.
