Bean Noodle Soup With Leaks And Pak Choi

- Some bean noodles (I would say a coconut size of bean noodle ball should do) shopping list
- 7 pak choi leaves (cut each each leaf length wise in about 3 pieces each) shopping list
- 2 leaks cut in slices (3mm slices) shopping list
- 2 carrots (cut in little cubes) shopping list
- 1 celery stick (cut in little cubes) shopping list
- 1 chilli (fresh or dry) (finely chopped) shopping list
- 6 cups of vegetable stock (either homemade or dissolve store bought into hot water) shopping list
- 2 bay leaves shopping list
- 5 clovers shopping list
- 1 cinnamon stick shopping list
- 2 teaspoons of ground ginger shopping list
- 2 tablespoons of olive oil shopping list
- 2 tablespoons of soy sauce shopping list
- salt and pepper shopping list
How to make it
- Heat up your pot and add the olive oil
- When the olive oil is ready throw in the clovers, cinnamon stick, bay leaves and ginger. Make a quick stir for 10 seconds and then throw in the leaks in and stir all together.
- Reduce the fire low-medium heat and cook until tender and starting to take colour.
- Throw in the pak choi and cook as well for another minute all together
- Add you vegetable stock, increase the heat to medium - high and bring to a boil. Stir occasionally
- Try the soup and add pepper and salt to your liking
- Try the vegetables and make sure they are cooked. Once they are ready throw in the noodles.
- Cook for another 2-3 minutes until the noodles are ready.
- Your soup is now ready! Enjoy!
