How to make it

  • Pound shallots, garlic,sugar, lemongrass to a paste
  • add fish sauce, and pepper and stir
  • place spareribs in roasting pan and pour mixture over ribs
  • marinate for at least 1 hour turning ribs in marinade
  • roast in oven about 45 min on about 180 c 350 f
  • or cook on barbecue until well browned and cooked thru
  • serve with boiled rice and a little of my Nuoc cham spooned
  • on top with a squeeze of lime garnish with red chilli
