Sweet Potato Soup Recipe
This delicious soup is so quick to make, especially after work when you don't feel like cooking a heavy meal. It's high in beta-carotene, iron, potassium, Vitamin E, antioxidants

Ingredients
  • 6 cups vegetable/chicken stock
  • 2 large sweet potatoes
  • 3 large carrots
  • 3 stalks celery
  • 2 cloves garlic
  • 5 shallots
  • 1 Tbsp fresh chives
  • 1/4 cup cream cheese
  • 1/2 Tbsp honey
  • 1/2 tsp black pepper (to taste)

Directions
  1. Bring stock to a boil in a large pot
  2. Peel potatoes, carrots
  3. Chop into 1-inch (approx.) cubes
  4. Wash celery
  5. Chop into 1/2 inch (approx.) slices
  6. Chop shallots into quarters
  7. Chop garlic cloves in half
  8. Chop fresh chives
  9. Add all above ingredients to stock, boil for 10-15 min or until all vegetables are soft
  10. Add honey and cream cheese
  11. Pour into blender
  12. Blend on high until mixture is pureed
  13. *Serve with garnishment of parsley and a dollop of fresh cream (optional)
