Sweet Potato Soup

- 6 cups vegetable/chicken stock shopping list
- 2 large sweet potatoes shopping list
- 3 large carrots shopping list
- 3 stalks celery shopping list
- 2 cloves garlic shopping list
- 5 shallots shopping list
- 1 Tbsp fresh chives shopping list
- 1/4 cup cream cheese shopping list
- 1/2 Tbsp honey shopping list
- 1/2 tsp black pepper (to taste) shopping list
How to make it
- Bring stock to a boil in a large pot
- Peel potatoes, carrots
- Chop into 1-inch (approx.) cubes
- Wash celery
- Chop into 1/2 inch (approx.) slices
- Chop shallots into quarters
- Chop garlic cloves in half
- Chop fresh chives
- Add all above ingredients to stock, boil for 10-15 min or until all vegetables are soft
- Add honey and cream cheese
- Pour into blender
- Blend on high until mixture is pureed
- *Serve with garnishment of parsley and a dollop of fresh cream (optional)
