Carrot Vichy Soup

- 2 1/4 lbs. of carrots shopping list
- 2 large leeks, white part only shopping list
- 2 medium russet potatoes, peeled shopping list
- 6 cups of chicken broth, low salt shopping list
- 2 cups of half and half shopping list
- 1 teaspoon of chopped dill shopping list
How to make it
- Peel and cut carrots, Prep leeks, Peel and cut potatoes.
- Cook in pressure cooker for 4 to 5 minutes with broth.
- Cool; then put through the blender until smooth.
- Add cream and dill.
- Serve hot or cold.
