Carrot Vichy Soup Recipe
Simple soup to make, great flavor. Good either hot or cold.

Ingredients
  • 2 1/4 lbs. of carrots
  • 2 large leeks, white part only
  • 2 medium russet potatoes, peeled
  • 6 cups of chicken broth, low salt
  • 2 cups of half and half
  • 1 teaspoon of chopped dill

Directions
  1. Peel and cut carrots, Prep leeks, Peel and cut potatoes.
  2. Cook in pressure cooker for 4 to 5 minutes with broth.
  3. Cool; then put through the blender until smooth.
  4. Add cream and dill.
  5. Serve hot or cold.
