Raisin Pecan Cake

- 1 cup raisins shopping list
- 2 cups boiling water shopping list
- 1 2/3 cup flour shopping list
- 2 1/2 tsp baking powder shopping list
- 1/4 tsp soda shopping list
- 1/4 tsp salt shopping list
- 1 tsp cinnamon shopping list
- 1/4 tsp allspice shopping list
- 1/2 cup butter shopping list
- 1 cup lightly packed brown sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 1/2 cup pecans shopping list
How to make it
- Simmer raisins in boiling water, cover 15 minutes. Drain well, saving 1/2 cup liquid. Cool.
- Sift together dry ingredients. Cream butter and sugar. Beat in eggs. Combine 1/2 cup liquid and vanilla. Add dry ingredients to creamed mixture alternately with liquid. Fold in raisins and pecans. Turn into 8" square cake pan. Bake in moderate oven 350°, 45 to 50 minutes.
