Light Sesame Chicken

- ■3 T. honey shopping list
- ■2 T. sesame seeds shopping list
- ■2 T. soy sauce shopping list
- ■1-2 tsp. rice wine vinegar (optional -this wasn't in the original recipe) shopping list
- ■3 cloves garlic, finely chopped shopping list
- ■2 egg whites shopping list
- ■1/4 c. cornstarch shopping list
- ■1 1/2 lb. chicken breast; boneless, skinless, and halved shopping list
- ■salt and pepper to taste shopping list
- ■2 T. vegetable oil shopping list
- ■1 1/2 lb. broccoli florets; steamed until tender shopping list
How to make it
- 1.In a small bowl; combine honey, sesame seeds, soy sauce, rice wine vinegar and garlic. Set aside.
- 2.In a large bowl; whisk together egg whites and cornstarch. Add chicken, seasoning with salt and pepper. Toss to coat.
- 3.In a large skillet; heat 1 tablespoon (15 ml) oil over medium-high heat. Add half the chicken. Cook, turning occasionally, until golden and cooked through, for 6 to 8 minutes.
- 4.Transfer chicken to plate; repeat with remaining oil and chicken.
- 5.Return all chicken to skillet. Add cooked broccoli, honey mixture and gently toss.
- 6.Serve with rice.

This is quick, easy and delish! Really like the crispiness of the cornstarch coating - I chunked the chicken, though, to make it bite-sized.
