How to make it

  • Let cheeses and butter soften.
  • Grate cheese.
  • Cream butter and cheeses together with heavy-duty mixer or food processor.
  • Add brandy and nuts.
  • Best if made a week or so before serving. Serve with a sturdy cracker, and pull it out of the fridge awhile before serving - to make it easier to spread - especially if you use actual Port Salut Cheese.
  • Keeps almost indefinitely.... seriously - months and months, thanks to the brandy.

    I have used both regular port salut and the pre-made Kaukana Port Wine spread with equally good results. My Mom almost always makes it with the spread, since it is easier to find, and usually cheaper. I don't notice a huge difference, but I have never had a side-by-side comparison.
