How to make it

  • 1. In a saucepan, sweat the garlic in the butter until soft.
  • 2. Add the chicken stock and the sun-dried tomatoes.
  • 3. Simmer for 10 minutes.
  • 4. Add the heavy cream and the basil.
  • 5. Simmer until reduced to desired thickness.
  • 6. Purée until smooth.
  • 7. Season with salt and pepper

    When I was catering, I used to make a zucchini appetizer - little zucc/quiche-like baked squares that this sauce would be really good over.
