A different take on the old peanut butter cookies.Add some oatmeal and it's a wonderful cookie.

Ingredients
  • 1/2 cup shortening
  • 1/2 cup margarine, softened
  • 1 cup brown sugar
  • 3/4 cup white sugar
  • 1 cup natural peanut butter
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp.salt
  • 1 cup quick cooking oats

Directions
  1. Preheat oven to 350
  2. In a large bowl, cream together shortening, margarine, brown sugar, white sugar and peanut butter until smooth.
  3. Beat in eggs one at a time until well blended.
  4. Combine flour, baking soda and salt. Stir into creamed mixture.
  5. Stir in the oats.
  6. Drop by teaspoonfuls onto cookie sheets.
  7. Bake 10-15 min. or until light brown.
  8. Do not overbake.
  9. Let cool 5 minutes on cookies sheet before moving to wire rack to cool further.
  10. Enjoy.
