Curried Chicken Salad With Mangoes & Cashews

- 1/3 cup mayonnaise shopping list
- 2 T. apricot preserves shopping list
- 1/2 t. curry powder shopping list
- juice of 1/2 a lime shopping list
- salt and cayenne to taste shopping list
- 2 cups cooked chicken, cubed shopping list
- 1 ripe mango, peeled, diced shopping list
- 1/2 cup celery, diced shopping list
- 1/4 cup scallions, sliced shopping list
- 1 T. chopped fresh cilantro shopping list
- 1/2 cup cashews, chopped shopping list
How to make it
- Combine mayonnaise, preserves, curry, lime juice, and seasonings in a large bowl.
- Add chicken, mango, celery, scallions, and cilantro; toss to coat. Stir in cashews before
- serving salad with toasted pita bread or on a croissant.
- C@H Note: Peel mango with a vegetable peeler, then cutthe flesh away from the large, flat pit, and dice.
